Ground Turkey Vegetable Soup

Yield = 20 1-cup servings

2 1/4 pounds ground turkey
3 medium onions
minced garlic (copious amounts)
2 1/4 cups celery, chopped
1 1/2 cups carrots, chopped
42 ounces Tomatoes, canned chopped
3 quarts beef broth
1 1/2 cups cabbage chopped
1/2 cup rice, uncooked
1 1/2 cups potatoes, diced
1 1/2 Tablespoons oregano
1 1/2 Tablespoons thyme
1 1/2 Tablespoons basil
1 1/2 Tablespoons salt
3/4 cup dried parsely

1. Brown the meat well and remove all, or most of, the grease. Set the meat aside
2. Sweat the onions, along with the copious amounts of garlic. To this add chopped celery, chopped carrots, chopped tomatoes, and beef broth. Then add the meat.
3. Simmer ingredients for 30 minutes
4. Add chopped cabbage, uncooked rice, diced potatoes, oregano, thyme, basil, and salt (pepper to taste). Add dried parsley.
5. Cook it another 45 minutes.

This soup actually tastes better the next day.
