Kluay Tord (Fried Bananas)

Yield = 4

2 large eggs - beaten
1/4 Cup Brown Sugar
3/4 Cup Rice Flour
1/4 Cup Shredded Coconut Meat
1/4 Cup Ice Water
4-6 firm, ripe bananas
1/4 Cup Vegetable Oil

Mix the eggs thoroughly with the brown sugar. Add the rice flour, coconut and ice water and mix well. Peel the bananas. Cut in half lengthwise, then in half cross each quarter. Dip in the batter and coat thoroughly. Heat the oil. Saute bananas until crisp and brown, turning out on paper towels. Serve immediately.
