Passover Chopped Liver Balls

Yield = 20

1/2 cup vegetable oil (approximate)
2 medium size onions, sliced
1 pounds liver (chicken or beef)
2 hard boiled eggs
3/4 t salt
1/4 t pepper

Pour 1/4 cup of oil in a skillet. Add the onions. Saute for about 10 minutes then remove onions and set aside. Pour more oil in the same skillet as needed. Saute the liver in it for 10 minutes or until done, stirring occasionally. Chop (meat grinder is best) onions, liver, and eggs very fine. Add the salt and pepper and mix well. Chill. Form into balls (1 inch). Serve cold.
